Its perfume can lift your mood almost instantly... and so I delved into making four kinds of marmalade all in two days. (Maybe I need to up my vitamin intake.) Nonetheless, I now have more than four dozen little jars of 'sunshine' in various flavors. I was going to the local grocery store with high hopes of finding lots of fresh ginger to make <a href="http://www.gingerpeople.com/ginger-spread.html" target="_blank">ginger spread</a>. I immediately noticed pints of kumquats (for some outrageous price) and on impulse decided to buy one- just as the produce gal was coming out to put them on sale. She saw them in my cart and stopped me to put $1.49 stickers on them- so I grabbed two more packages. Score! </div><div style="text-align: center;"><br />

Cut stem end off and slice as thin as possible, plucking out and reserving any seeds you find (as they will be our little pectin workhorses). Cook for about 30-40 minutes, stirring once in a while (turning heat down if it starts sticking to the bottom) until thickened. Add honey, watch carefully towards the end and bring temp up to 220F degrees (gel stage). Squeeze out and remove seed/anise package and ladle hot marmalade into prepared jars. Wipe rims well with a damp paper towel, seal with lid and band and place in prepared large stock pot. Boil in water bath for ten minutes. Very easy but takes a little bit of time, however you could do break it into two steps- I baked the loaves and found that freezing them before slicing helps a lot- just leave the loaves in the freezer then pull out and slice off as many as you want to bake off whenever you want!</div><div style="text-align: center;">---------<br />

</div><div style="text-align: center;">And because I'm just weird like I am, I have pre-cooked & portioned, <i>shredded chicken</i> in my freezer, ready to just be warmed through... Although most of you arent like me, it's quick to prep the chicken for this pizza- just poach a couple of <i>chix breasts</i> with some roughly chopped <i>celery ribs, onion, carrot and garlic</i>, as well as <i>bay leaves, peppercorns and a couple dried hot chilies</i> in simmering water until done. Let sit until cool enough to shred. Set aside.</div><div style="text-align: center;"><br />
</div><div style="text-align: center;"> So then:</div><div style="text-align: center;"> Thinly<i> </i>slice<i> 1 medium sweet potato</i>. Toss the slices with a little <i>olive oil, salt & pepper</i>, and then grill the potatoes in a cast iron grill pan, turning over to crsip both sides, and then set aside. While the pan is still hot, grill <i>1 green bell pepper</i>, cut into long strips, turning until lightly charred. Let cool and roughly chop. Set aside.</div><div style="text-align: center;"><br />

It took 15lbs of carrots, 36 eggs, 24 cups of sugar, 40 cups of flour, 12 lbs of cream cheese (!) 24 cups of powdered sugar, and LOTS of fricken' LOVE... about 9 hours of prep/mixing/baking/frosting time & I didnt burn/drop/mess any of them up! --not that I would EVER do that... 8 boxes of 35 'cakes...
